Yasser Bagersh runs one of the biggest catering operations in the country which produces over 7000 meals a day for the employees of major corporations around the country. Including Heineken, East African Bottling SC (Coke), Awash Winery, National Tobacco Corporation and Habesha Beer.

The process of cooking is wonderful. However, sharing what you just cooked is thrilling.

He cooks and bakes regularly in his own restaurant, the Lime Tree. He teaches cooking classes at the Lime Tree and caters at some of the most prestigious venues in Ethiopia. He has cooked for heads of states and celebrities including the Pulitzer family, Brad Pitt and Candace Bergen.

Yasser’s favorite injera snack recipe….


Chickpea Fitfit
CREATE THE SAUCE:
Mix together
1/4 cup of water.
1/2 teaspoon of berbere,
1/3 cup of diced tomatoes,
2 tablespoons of chopped onions
2 teaspoons of lime juice and
3 tablespoons of boiled chickpeas.
Season with salt to taste. ASSEMBLE THE FITFIT: Cut up 1/3 of an injera into small bits and mix it with the above and serve chilled and garnish with green green chili.
ASSEMBLE THE FITFIT:
Cut up 1/3 of an injera into small bits (roll and cut) and combine with the above mixture, serve chilled.
